Mocha truffles

Truffles are easier than you think to make. Basic recipe is 1/2 heavy cream and a cup of chocolate a teaspoon of vanilla and a pinch of salt. You heat the cream in a double boiler until it's steaming do not boil it will ruin the cream. Put chocolate in a bowl pour cream over it. Stir until all the chocolate is melted. Place in refrigerator for 2 hours. After two hours make Bite sized balls place on cookie sheet and return to refrigerator for an hour. Melt more chocolate for coating. Coat and return to refrigerator, decorate.
